Split Pea & Ham Soup

green split peas |

dried thyme |

Instructions
- In a thick bottomed pot over medium heat, add oil and preheat until it shimmers.
- Add ham and sauté until lightly browned.
- Add onions, carrots, celery and garlic and continue to cook until onions become translucent.
- Add wine and vegetable stock and bring to a boil.
- Add peas, salt, pepper, thyme and bay leaves and reduce heat to a simmer.
- Continue simmering for 25-35 minutes, stirring occasionally.
- When peas are soft and beginning to break down, remove bay leaves and add salt and pepper to taste.
