Watermelon Agua Fresca

When you get a watermelon with too many seeds, try this refreshing drink.

Ingredients
1 watermelon
2 cups water
1 1⁄2 tablespoons lime juice
honey
Instructions
Cut the watermelon into big chunks, carve away all the rind, and cut the flesh into smaller chunks. Working in batches, liquefy the melon in a food processor or blender, pulsing on and off for about 1 minute so as not to grind up the seeds. Strain, pushing as much of the pulp through the strainer as you can. You should have about 5 1/2 cups of juice. Thin out with about 2 cups water and sweeten with honey to taste. Add lime juice. Chill over ice or in the refrigerator, and serve garnished with a slice of watermelon or lime.
