Veggie Taco with Cilantro Lime Sour Cream

Nothing beats the taste of a fresh corn tortilla. Add some fresh vegetables and a flavorful sour cream dip and you have the perfect snack or meal.

12 Tacos
Ingredients
2 cups flour, masa corn
1⁄2 teaspoon salt
1 1⁄2 cups water (hot)
1 can beans, refried
2 onion (small, diced)
2 bell pepper, yellow sweet (diced)
1 carrot (large, shredded)
4 tomato, roma (sliced)
8 ounces cheese (shredded)
4 ounces sour cream
1⁄2 lime (juiced)
1 tablespoon cilantro (finely diced)
Instructions
For Tortillas:
Mix the flour, salt, and water in a bowl until it reaches a doughy consistency. Let rest for 10 minutes. Form small ball's and press flat with a tortilla press. Fry until lightly brown on both sides over medium heat.
For Filling:
Mix all the ingredients except for the sour cream, lime juice, and cilantro in a large bowl.
For Cilantro Lime Sour Cream:
Mix the remaining ingredients in a bowl.
Preparation:
Fill the shells with the filling, fold in half and grill taco to warm through on medium heat. Serve with sour cream on the side.
