Veggie Quiche

This is no ordinary Vegetarian Quiche. A big mix of fresh flavors and a bit of a spicy kick make this a delicious breakfast treat.

Ingredients
1 tablespoon vegetable oil
3 onion (chopped)
1 1⁄2 bell pepper, green (large, chopped)
2 tablespoons garlic (minced)
10 egg (beaten)
3 zucchini (peeled and grated)
3 squash, summer (peeled and grated)
3 carrot (grated)
3 green onion (sliced)
3 cups buttermilk baking mix
1 1⁄2 cups cheese, sharp cheddar (shredded)
3⁄4 cup vegetable oil
1 tablespoon salt
2 1⁄4 teaspoons Italian seasoning
1 1⁄2 teaspoons paprika
1 1⁄2 teaspoons red pepper flakes
black pepper (to taste)
1 1⁄2 cups cheese, cheddar (shredded)
Instructions
- Preheat oven to 350 degrees. Grease pie dish.
- Heat 1 teaspoon vegetable oil in a skillet over medium heat. Saute onion, bell pepper, and garlic until tender, about 5 minutes. Transfer mixture to a bowl.
- Mix eggs, zucchini, yellow squash, carrots, green onion, baking mix, 1/2 cup Cheddar Cheese, 1/4 cup vegetable oil, salt, italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish and sprinkle with remaining cheddar cheese.
- Bake in preheated oven until lightly browned about, about 35 minutes.
