Ingredients
1 bunch parsley, fresh
1 onion
1 leek
2 carrot
2 celery (stalk)
1 bunch thyme, fresh
2 bay leaf
2 quarts water
8 cloves garlic
Instructions
Wash vegetables thoroughly. Soak sliced leeks in a bowl of cold water to remove dirt. Place all ingredients in a stock pot. Add water, bring to a boil, and imediately reduce to a simmer. Cook uncovered 40 minutes. Strain.
Notes
Variation: Start by adding 1 tablespoon oil to stockpot; lightly brown the onions and carrots (10minutes medium high heat). Add the rest of the ingredients and proceed. Include any vegetables, herbs, and trimmings appropriate to final use.
Don't season stock.....season later!
