Ingredients
4 pounds pork leg (or pork loin)
1 bunch cilantro
2 onion
3 avocado
6 chili, gaujillo
1 teaspoon oregano, dried
1 teaspoon black pepper, ground
1 clove garlic
1 dash white vinegar
4 lime
1 can pineapple (slices)
3 pepper, jalapeño
flour, masa corn (fresh, for tortillas or Maseca)
Instructions
To prepare the meat for the tacos: Grind the guajillo chilies. Add the vinegar, oregano, pepper, garlic and onion. Chop up the pork leg into little pieces and let it marinate in the guajillo marinade overnight, or for two hours. After it has marinated for a while, sauté the pork in the juices of the marinade. Set aside.
To prepare the guacamole for the tacos: Chop up the cilantro and onion and place it in the blender with the avocado, the jalapeño peppers and some lime juice. Blend lightly and set aside.
For the tortillas: Prepare the tortillas according to the directions indicated on the Maceca package.
When you are ready to assemble the tacos place the desired amount of meat on the tortilla, add chopped cilantro, chopped onion, grilled slices of pineapple, guacamole and lime juice as desired. Fold taco in your hands and enjoy!
