Sweet Potato Ginger Soup

This recipe was submitted for our We ♥ Local Sweet Potatoes recipe competition in February 2013 by Kari Cuneo. Kari says, "This soup is really easy to make, very yummy, and totally kid friendly! Our now 8 year old daughter has asked me to make this for her birthday for the last several years. We love it!

Ingredients
2 carrot
2 leek
1 onion
4 tablespoons olive oil
4 cloves garlic
2 pounds sweet potato
10 cups stock, vegetable
1 teaspoon ginger, ground
1 teaspoon cinnamon, ground
1⁄2 teaspoon cloves, ground
1⁄2 teaspoon nutmeg, ground
1 lime
2 teaspoons salt
1 teaspoon black pepper
Instructions
Heat the olive oil in large soup pot and sauté the leeks, onions and carrots until slightly browned (stirring occasionally). Add garlic and sauté 1 more minute. Add the sweet potatoes, broth, ginger, cinnamon, cloves, and nutmeg to the soup. Bring to a low boil and cook until sweet potatoes are tender.
Puree the soup using an immersion blender, standard blender, or food processor. Add more salt, pepper, lime and ginger to taste. Serve hot.
