Sweet and Tangy Chicken with Cherries
This tender chicken bakes in a savory sauce that combines cherries with soy sauce, orange juice and ginger. The sweet cherries give it a beautiful red glaze.

Set aside 1/3 cup cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, lemon juice, garlic and ginger; blend again and set aside.
In a large Dutch oven or oven-proof pot over medium heat, brown chicken on all sides in butter. Top with sauce. Turn all chicken pieces skin-side down.
Bake, uncovered, at 350° for 20 minutes.
Turn chicken pieces skin-side up. Top with reserved cherries. Continue to bake, uncovered about 30 minutes longer, or until chicken juices run clear. Serve with a slotted spoon over white rice.
