Simple Cauliflower Rice

Try out this quick and easy cauliflower rice. Great substitute in any dish that calls for white or brown rice!

Ingredients
1 cauliflower (washed and dried)
1 tablespoon olive oil
1 teaspoon salt
1⁄2 teaspoon pepper
1 teaspoon cilantro, fresh (or parsley, finely chopped)
1 teaspoon tarragon, fresh (finely chopped)
Instructions
Remove all the greens from the cauliflower and cut into four even pieces. Take each piece and grate using a box grater on the medium sized wholes. Alternatively, use a food processor with the grater attachment to run the cauliflower through. You should end up with cauliflower the size of rice. Transfer to a large bowl and using a clean towel, pat any excess moisture out of the cauliflower.
Once your cauliflower rice is dry, simply sauté in a large skillet over medium heat in 1 Tbsp olive oil. Cover with lid and cook for 5-8 minutes. Take the cauliflower rice off the heat and season with fresh herbs, salt and pepper to taste.
