Ingredients

Wings

1 cauliflower
1⁄2 cup flour, all-purpose
1⁄2 cup water
1⁄4 teaspoon salt
1⁄2 teaspoon black pepper, freshly ground
1 teaspoon garlic powder
1⁄4 teaspoon red pepper (crushed)
1⁄4 teaspoon ginger, ground

Sauce

5 tablespoons maple syrup
3 tablespoons soy sauce (low sodium)
1⁄2 teaspoon sesame seeds (plus more for garnish)
1⁄4 teaspoon black pepper, ground
1⁄4 teaspoon ginger, ground
1 teaspoon cornstarch (mix with equal amount of water to form slurry)
1⁄4 cup water
  scallion (chopped for garnish)

Instructions

  • Preheat oven to 450°F/230°C. Prepare a baking sheet by lining it with a silicone baking sheet or greased foil.
  • Prepare a baking sheet by lining it with a silicone baking sheet or greased foil. Using a knife, remove florets from the cauliflower. Chop the cauliflower into smaller pieces to resemble the size of the wings.
  • In a separate bowl, whisk the flour, salt, ground black pepper, garlic powder and ground ginger in a bowl to make the batter. In a separate bowl, place the breadcrumbs.
  • Toss the cauliflower in the batter mixture, using a spatula to coat them all. Toss them in the breadcrumbs to coat completely, then place onto the baking sheet, giving each wing enough space. Repeat until all of the wings are coated.
  • Bake for 22 minutes.
  • Over medium high heat, mix all the ingredients. Whisk together to dissolve the slurry. Bring to a boil, then simmer for 5 minutes to let sauce thicken up. Whisk frequently to ensure it mixes evenly. Taste test and add more maple or soy if needed. Cool until thick.
  • Remove from oven. Toss the wings in the sauce. Remove and put them back on on the baking sheet. Bake for another 5 minutes.
  • Enjoy
