Salmon Patties

These patties are great with salmon or tuna. If you use tuna, plan on adding an extra egg for moisture.

Ingredients
black pepper
1 egg
1⁄2 cup oats
12 ounces salmon (or tuna)
1 tablespoon flour
1 teaspoon salt
4 scallion
2 tablespoons dill, dried
1⁄4 cup olive oil
Instructions
Blend ingredients together. Form into patties and dredge in flour. Heat olive oil in a large pan over medium-high heat. Place salmon patties in pan and fry until golden, about 10 minutes on each side. Serve warm, with creamed new potatoes and peas (if desired). Serves 4.
