Rotisserie Chicken Burrito Bowls

Ingredients
1 tablespoon vegetable oil
1⁄2 cup salsa
1 1⁄2 cups chicken, cooked (shredded from rotisserie chicken)
1 can beans, black (drained and rinsed)
1 cup rice, white (uncooked)
2 cups chicken broth
1⁄4 teaspoon cayenne (to taste)
1 teaspoon cumin
Instructions
- Add oil to a large pot and heat over medium high. Add uncooked rice and toast until the grains are slightly golden.
- Add cayenne and cumin to the pan and toast for 30 seconds. Add salsa and broth, then cover, reduce to a simmer, and cook until rice is done, about 12-15 minutes.
- When rice is done, mix shredded cooked chicken into rice, then portion into bowls and top with all your favorite toppings!
