1 tablespoon olive oil
2 egg
1 tablespoon milk
1⁄4 pound ramps
salt

Instructions
Wash ramps well. Spin excess water off of ramps, leaving them a bit moist. Chop the ramp greens into 2-inch pieces and the whites into ½ inch pieces.
Heat olive oil in a small cast iron skillet. Scramble eggs with milk in a small bowl. Sauté ramps in the skillet for a few minutes. Add eggs. Cook until set.
