Quinoa Salad Recipe with Lime and Fresh Mint

This salad is delicious for lunch or as a side dish with dinner.

Ingredients

1 cup quinoa
2 tablespoons olive oil, extra virgin (fruity)
2 lime (juiced)
2 mint, fresh (sprigs)
2 tablespoons cilantro
  sea salt
1⁄2 cup tomato, cherry
2 tablespoons onion, red
1 clove garlic
  black pepper

Instructions

First, rinse your quinoa in a sieve (it's tiny so the usual colander might not do).

Cook the quinoa in 2 ¼ to 2 ½ cups fresh salted water, covered, until all of the water is absorbed. Prepare the remaining ingredients while the quinoa is cooking.

Scoop the cooked quinoa into a bowl and add the remaining ingredients, tossing lightly with a fork until combined. Taste test and adjust seasonings. Cover and chill.
