Quick Classic Gazpacho
This is the perfect summertime soup. Leftovers will make a great lunch, too.

Ingredients
1⁄2 cup water
2 tablespoons olive oil, extra virgin
1 cucumber
1 onion
2 cloves garlic
2 tablespoons apple cider vinegar
1 pepper, jalapeño
2 cans tomato
1 bell pepper, red (or yellow)
2 tablespoons parsley, fresh
Instructions
Process ½ cup of tomatoes, along with the water and oil, in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve.
