Portobello Pizza

Ingredients
4 tomato (diced)
4 mushrooms, portobello (large)
4 cloves garlic (chopped)
1 tablespoon lemon juice
1 leek (chopped)
1 onion (chopped)
basil, fresh
parsley, fresh
cheese (shredded)
2 tablespoons olive oil
salt (to taste)
Instructions
Preheat oven to 400 degrees. Heat oil. Saute onion until slightly brown. Add tomatoes, garlic, leek, and a pinch of salt and cook until tomatoes are soft. Drizzle lemon juice over mixture. Add about 5 chopped basil leaves. Grease a baking sheet and place mushrooms bottom side up. Add the tomato mixture to each mushroom, sprinkle with shredded cheese, and bake for 12 minutes (or until mushrooms are soft). Sprinkle with fresh parsley and enjoy!
