No Bake Peanut Butter Cookies

What’s more low-maintenance for the bake-to-school season than a no-bake recipe?! Worry not, they are full of flavor and are a great energy boost.

Ingredients

3 cups oats
1⁄4 cup butter
1 1⁄2 cups sugar, granulated
2 tablespoons sugar, brown
1⁄2 cup milk
1⁄4 cup cocoa powder (optional)
1 cup peanut butter
2 tablespoons vanilla extract
1⁄2 teaspoon salt
2⁄3 cup chocolate chips (optional)

Instructions

Line a baking sheet that fits in your refrigerator with parchment paper and set aside. Melt butter in a large microwave-safe bowl. Let cool slightly and add milk, whisking to combine. Add all other ingredients besides the oats (and chocolate chips if using) and mix well to combine. Add oats and chocolate chips last, stirring well to evenly distribute.

 Drop 1 Tbsp. of dough at a time onto the lined baking sheets and press down on each slightly. Refrigerate for at least 30 minutes and then enjoy! Keep refrigerated until ready to eat. They also keep well in the freezer.
