Moroccan Lentil Salad with Celery, Dates, and Pistachios

Ingredients
Salad
2 cups lentils, French (cooked)
8 celery stalk (thinly sliced on a diagonal)
4 scallion (thinly sliced)
1⁄2 bunch parsley, flat-leaf (chopped)
1⁄2 cup pistachio meats, roasted and salted
1⁄4 cup cheese, parmesan (shaved)
Dressing
1⁄4 cup olive oil
3 tablespoons lemon juice
2 teaspoons maple syrup
1 teaspoon cumin
1⁄2 teaspoon paprika, smoked
1⁄2 teaspoon cayenne pepper (to taste)
salt (to taste)
black pepper (to taste)
Instructions
Combine salad dressing ingredients in a small bowl and whisk thoroughly. In a large bowl, combine all salad ingredients, drizzle with dressing, and stir well. Serve cold or room temperature.
