Ingredients
3 plantain (ripe, peeled and cut into 1" slices)
2⁄3 cup vegetable oil
1⁄2 cup sugar
Instructions
Lightly roll the plantains in white or brown sugar before frying. Fry the pieces briefly, about a minute each side. Reduce heat to low and continue cooking, turning until they are brown and caramelized.
