Lucky Broccoli Fried Rice

Broccoli represents prosperity for Chinese New Year celebrations. We have combined it here with carrots, frozen peas and scallions for our version of fried rice, which contains more vitamin-packed veggies than usual.

Ingredients

3 tablespoons soy sauce
2 tablespoons chili garlic sauce
5 tablespoons sesame oil
2 egg
1 broccoli
2 carrot
1 bunch scallion
3 cups rice, brown
1 cup peas, frozen
  salt

Instructions

Note on Rice: We like brown jasmine rice, which is fragrant, in this recipe. Use any rice that you like and have on hand.

In a small bowl combine the tamari, chili-garlic sauce and 1 tablespoon of the sesame oil; set aside.

Heat 2 tablespoons of the remaining sesame oil in a large, wide nonstick skillet over medium-low heat. Add the eggs and a pinch of salt and cook until the eggs just set; remove to a plate.

Wipe out the skillet with paper towels and return to the stove over medium-high heat. Add the remaining sesame oil, the broccoli and a pinch of salt and cook, tossing often, until starting to soften, 2 minutes. Add the carrots and half of the scallions and continue to cook, tossing, until the vegetables are just cooked and crisp-tender, another 1 to 2 minutes. Add the rice and the frozen peas and cook, tossing gently, for another minute. Add the eggs and the tamari-chili garlic mixture to the rice and toss gently to coat, cooking for another minute. Sprinkle with the remaining scallions to serve.
