Ingredients
2 pounds thighs, chicken (boneless, skinless)
1 cup yogurt, Greek (plain)
2 cloves garlic (minced)
2 tablespoons olive oil, extra virgin
1 tablespoon cumin, ground
1 tablespoon coriander, ground
1⁄2 tablespoon paprika, ground
1⁄4 teaspoon cinnamon, ground
1⁄2 tablespoon mint, dried
2 tablespoons lemon juice
salt and pepper (to taste)
Instructions
- Combine the Greek yogurt, spices, garlic, lemon juice, and olive oil.
- Cut the chicken into 1-inch strips. Coat the chicken with the marinade and let sit 1-2 hours. Skewer the chicken by starting at one end of the strip and ribboning the chicken onto the skewer. Once all the chicken is skewered, season with salt and pepper.
- Grill the skewers for 5-6 minutes on each side or until the chicken is cooked through.
