Heirloom Cheddar Soup

Ingredients
2 tablespoons butter, salted
1 onion (chopped)
2 carrot (diced)
1 bell pepper, red (diced)
7 cups potato (diced)
1 hard cider (one bottle, like Champlain Orchard's Heirloom Hard Cider)
2 1⁄2 cups cheese, sharp cheddar (or smoked cheddar, shredded)
2 cups half & half
1 teaspoon black pepper
2 teaspoons salt, garlic
Instructions
Sauté onion, carrot, and sweet pepper until soft. Add potato and cider. Simmer for 30-40 minutes, until the potatoes are soft. Remove from heat, and add remaining ingredients. Blend with an immersion blender until smooth.
