Healing Your Gut Stir-Fry

Ingredients

2 fennel (stalks, chopped)
1 bunch bok choy
1 onion (minced)
4 cloves garlic (minced)
2 carrot (cut into matchsticks)
10 mushrooms
1 zucchini
1 teaspoon cumin, ground
1 teaspoon turmeric, ground
1⁄4 teaspoon black pepper
1 teaspoon ginger, ground
1 bunch cilantro
2 tablespoons coconut oil
3 tablespoons miso (disolved in 1/3 cup water)

Instructions

Mince garlic and let sit for a minute. Add 1-2 Tablespoons coconut oil and heat a sauté pan on medium high heat. Add cumin powder and turmeric powder and stir. Add minced garlic and onion, stir, and fry until translucent Add the rest of the vegetables and stir on medium heat until they are soft, but still a little crunchy, about 5 minutes. Add miso and stir for 1 minute to coat. Serve with kitchari for a healing meal.
