Grilled Tomato Sauce

This is a good recipe to use if you have too many tomatoes and want to take full advantage of the grill. You can also easily line a pan with foil and broil the tomatoes. Ah, summer.

Ingredients
2 tablespoons olive oil
8 tomato
1⁄2 onion

Instructions
Grill the tomatoes, gradually turning them until they are blistered and slightly charred. Pull off any blackened or hard skin. Roughly puree them in a blender, leaving some texture.
Heat the olive oil and cook gently the onions gently until translucent, about 8 minutes. Add the tomatoes and cook over medium heat for 5-10 minutes to remove excess water. Taste and season with salt if necessary.
Use as is or as a base for your favorite sauce, soup, or stew.
