Ginger Tuna Salad

This tuna salad works well on sandwiches, or mix it up a little and try it in a lettuce wrap.

Ingredients
12 ounces tuna (water-packed, drained well)
2 lemongrass (stalks, outer stalk removed, tender inner parts thinly sliced)
1 tablespoon ginger, fresh (minced)
1⁄2 cup bell pepper, red (thinly sliced)
2 green onion (thinly sliced)
1 pepper, jalapeño (seeded and minced)
1⁄4 cup lime juice
2 tablespoons fish sauce
1 tablespoon vegetable oil
1⁄4 cup peanuts (roasted and unsalted, roughly chopped)
Instructions
In a large bowl, mix all ingredients together thoroughly, breaking any large chunks of tuna into smaller pieces.
