Ingredients
2 mango (peeled and cut into 1/8-inch pieces)
2⁄3 cup onion, red (finely diced)
2 teaspoons salt, kosher
2 teaspoons white vinegar
2 tablespoons lime juice
1 teaspoon pepper, habanero (finely diced)
6 tablespoons cilantro (finely chopped)
2 tablespoons mint, fresh (finely chopped)
2 tablespoons bell pepper, red (finely diced)
Instructions
In a medium mixing bowl, combine fruit, vegetables, and herbs. In separate bowl, combine salt, sugar, and liquids and whisk until combined. Pour liquid mixture over fruit mixture. Mix thoroughly. Cover and refrigerate overnight to allow ingredients to blend.
