Everyday Tomato Cucumber Salad

This is a fresh summer recipe, perfect for showcasing local produce (or produce from your own garden!).

Ingredients
3 cups tomato, cherry (diced or halved)
3 cups cucumber (diced)
3 tablespoons olive oil, extra virgin
1 tablespoon white vinegar (or apple cider vinegar, or lemon juice)
1⁄4 cup herbs, fresh (your choice )
2 scallion (chopped)
Instructions
Combine tomatoes, cucumbers and scallions in a large bowl. Season with salt and pepper.
Add oil and vinegar and toss. Add herbs and toss again. Let stand for at least 10 minutes prior to serving.
