Crunchy Cucumber Salad

Ingredients
1 avocado (ripe, pitted, peeled and diced)
2 cucumber, English (thinly sliced)
1 cup tomatoes, cherry (halved)
1⁄2 cup radish (thinly sliced)
1⁄2 cup olive oil, extra virgin
1⁄4 cup balsamic vinegar
3 tablespoons mustard, spicy brown
1 clove garlic (peeled and minced)
1⁄2 teaspoon salt
1⁄2 teaspoon black pepper
Instructions
In a medium bowl, whisk together the olive oil, balsamic vinegar, mustard, garlic, salt and pepper until blended. Add the cucumbers, tomatoes, radishes and avocado to the bowl and toss gently to combine. Season with additional salt and pepper if necessary. Serve immediately.
