  Ingredients
1⁄4 cup tamari
            
                                          2 tablespoons chili powder
            
                                          1 tablespoon cumin, ground
            
                                          1 teaspoon black pepper (plus more to taste)
            
                                          2 pounds tofu
            
                                          1 cup corn niblets
            
                                          15 ounces beans, black
            
                                          3⁄4 cup onion, red
            
                                          2 tablespoons oregano, fresh
            
                                          3⁄4 cup tomato juice
            
                                          2 tablespoons lime juice
            
                                          2 tablespoons sunflower oil
            
                                          3 cloves garlic
            
                                            salt
            
            Instructions
Preheat oven to 425°F.
To prepare the tofu, mix the tamari, chili powder, ground cumin and pepper in a large bowl, breaking up any lumps. Add in tofu cubes and gently mix to coat thoroughly.
Spread evenly on a sheet tray being careful not to overcrowd. Roast at 425°F for 25-30 minutes or until nicely colored.
Combine remaining ingredients in a large bowl and mix well. Add the roasted tofu and adjust seasonings to taste.
