City Market's Sausage, Kale & Butternut Squash Stuffing
We call this a stuffing, but please note that we don’t recommend cooking it inside a turkey.

Preheat oven to 350 degrees F. Butter a 9 by 11 inch baking dish and set aside. Heat 1 tablespoon butter in a large skillet, over medium heat. Add sausage and cook until golden brown, about 6 minutes. Add leeks and squash to skillet. Season lightly with salt and pepper, then cook until leeks are soft, about 3 minutes. Add the kale, toss and cover to wilt, about 4 minutes. Add stuffing mix and the remaining 3 tablespoons of butter, combine to melt butter. Whisk egg and chicken broth in a large bowl until smooth; stir in the diced parmesan. Pour mixture into the large skillet and cook until liquid has been absorbed by the bread.
Transfer mixture into the prepared baking dish. Scatter shredded cheese evenly on top. Bake for 30 to 45 minutes. If the top starts to brown, cover with aluminum foil.
