City Market's Chilled Melon Soup
This savory soup is a great way to cool off in the summer and an excellent way to use up melons and cucumbers!

Ingredients
2 honeydew melon
1 cucumber
1⁄4 cup scallion
2 tablespoons ginger, fresh
1⁄2 pepper, jalapeño
1⁄4 cup mint, fresh
2 lime (juiced)
1 orange (juiced)
1⁄4 cup yogurt, plain
salt (to taste)
Instructions
Cut the peeled & seeded melons and cucumber into chunks. In a blender, puree the melon, cucumber, scallions, ginger, jalapeno and mint with the juices. Add the yogurt and enough water to make a pleasing soup.
If needed, add more lime or orange juice, depending on the sweetness of the melon. Season with salt. Chill to 40 degrees, serve chilled.
May substitute other melons, as desired.
