Ingredients
3 pounds cranberries (fresh)
1 tablespoon ginger, fresh (peeled and minced)
3⁄4 cup sugar, brown
3⁄4 cup sugar
2 shallot (minced)
1 ounce lemon juice
1 teaspoon orange zest
1 cup apple cider
1⁄4 cup orange juice
1 teaspoon allspice, ground
1⁄8 teaspoon nutmeg, ground
1⁄8 teaspoon cinnamon, ground
1⁄8 teaspoon salt, kosher
1 rosemary sprig (fresh)
Instructions
In a medium saucepan on medium heat, combine sugar, brown sugar, lemon juice, orange juice and salt. Add apple cider and stir to allow sugar to dissolve. Add ginger, shallots, cranberries, orange zest and dried spices, bring to a boil. Reduce heat and simmer. Add rosemary, stir until the cranberries have softened and no liquid remains—about 15-20 minutes. Remove rosemary and cool.
