Chorizo Gravy

Try chorizo in place of the usual breakfast sausage for a spicy, creamy, and delicious gravy! Perfect on top of buttermilk biscuits.

Ingredients

4 tablespoons flour, all-purpose
10 ounces sausage, chorizo
3 cups milk
  salt
  black pepper

Instructions

Remove casing from chorizo and crumble the sausage. Cook the chorizo over medium heat for about 5 minutes, stirring it constantly. Add flour and stir into the fats in the pan and continue stirring until all the flour is absorbed. Lower heat to medium-low. Add milk slowly, stirring frequently, and cook for about 10 minutes until the gravy is thick. Season with salt and generous black pepper. If the gravy is too thick, stir in more milk. Enjoy right away or freeze for later.
