Chipotle Pork Tacos

For a state that borders Canada, Vermont has impressively good taco options. We are partial to the tacos at El Cortijo in Burlington and Mad Taco in Waitsfield and Montpelier. We chose ground pork, which cooks in 10 minutes or less, for these spicy tacos, which are a great option for a casual weeknight dinner. Make it a meal by setting up lots of fresh garnish optionssliced avocado, sliced red onion, fresh cilantro, lime wedges, our Peach-Jalapeno Salsa and Spicy Crema.

Ingredients

1 tablespoon canola oil
1 onion
1 clove garlic
1⁄2 teaspoon salt
2 slices bacon
1 pound pork (ground)
2 cups beer, lager
2 tomato, plum
3 pepper, chipotle
1 teaspoon chili powder

Instructions

Heat the oil in a large skillet over medium heat. Add the onion, garlic and salt and cook, stirring often, until softened and starting to brown, 5 to 7 minutes. Add the bacon and pork and cook, breaking up the meat with the tip of a wooden spoon, until the meat is cooked through and browned in spots, 5 to 7 minutes more. Raise the heat as necessary during cooking to make sure that the pork browns rather than steams.

Add the beer to the skillet and lower the heat to medium to medium high. Bring to a simmer, scraping up the brown bits stuck to the bottom of the pan. Add the tomatoes, chipotles and chile powder and cook, stirring, until the beer is reduced significantly and has turned into a saucy consistency. Adjust the seasoning with salt and serve.
