Chimichurri Sauce

Chimichurri is a thick, highly seasoned and slightly spicy South American herb sauce made of finely chopped parsley and garlic.  It is easy to make and traditionally served with grilled meats and poultry, but also tastes great on grilled vegetables

Ingredients

1⁄2 cup red wine vinegar
3 cloves garlic
1⁄2 cup olive oil
1 teaspoon red pepper flakes (crushed)
1⁄2 teaspoon salt
1 cup parsley, flat-leaf (fresh)
1⁄4 cup oregano, fresh
1 lemon
1⁄2 teaspoon cumin, ground
1⁄2 teaspoon paprika
  black pepper

Instructions

Using a food processor or blender, process all ingredients until well-blended -- chunky, like a pesto, rather than smooth.
Serve on grilled chicken, steak or veggies.
