2 grapefruit
3 orange
4 lemon
1 cup sugar
Instructions
Carefully cut the peel from each fruit using long, curved cuts from top to bottom. Leave as much of the white pith with the fruit, then save the fruit for other uses. Cut peel into quarter inch wide strips, then cook in boiling water for 10 minutes. Remove from water onto a cookie sheet or plate and allow to cool.
Empty your pot and add 1 cup of sugar and 1 cup of water. Stir and bring to a boil, then add the peel. Continue boiling for about 10 minutes, or until the peel becomes translucent. Remove peel from the syrup with a slotted spoon, placing back on cookie sheet without touching each other. Allow to cool for about an hour. Optional: coat the peel with more sugar after cooling if desired.
