Butternut Squash Pesto

Pesto turns the pasta a beautiful golden orange and the pesto also freezes well if you want to make more.

Ingredients

1 cup squash, butternut (roasted)
1⁄4 cup pecans
1 clove garlic
1⁄4 cup olive oil, extra virgin
1⁄2 tablespoon black pepper, freshly ground

Instructions

Place all the ingredients in a blender or food processor and purée until smooth. Combine with your favorite pasta dish and serve with fresh grated romano cheese!
