Broccoli Slaw

The creamy, zingy buttermilk dressing in this salad will make it disappear almost as quickly as it goes together. Try it for lunch or as an accompaniment to your next summer picnic.

Ingredients
2 broccoli (heads)
1⁄2 cup almonds (slivered)
1⁄3 cup cranberries, dried
1⁄2 onion, red (plus 3 Tbsp for dressing)
1⁄2 cup buttermilk
1⁄3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
salt
black pepper
Instructions
Trim broccoli and thinly slice it into nice, small florets and pieces of stem.
Toss the sliced broccoli with the almonds, cranberries and 3 Tbsp chopped red onion in a large bowl. Meanwhile, whisk the remaining dressing ingredients in a smaller bowl or in a blender. Pour the dressing over the broccoli and toss it well. Season well with salt and pepper to taste.
