Ingredients
8 cups water
2 cups beer
2 cups salt, kosher
1 cup brown sugar
3 bay leaf
1 tablespoon mustard seeds, brown
1 tablespoon thyme, dried
10 juniper berries
10 peppercorns, black
8 cloves garlic
1 pound beef brisket
Instructions
Measure all ingredients except brisket into a 4 quart pan, and bring to a boil for 5 minutes. Set aside to cool. Remove brisket from its packaging and pat dry with paper towel. Pierce the meat all over with a skewer. Submerge beef in cold water, remove from water and pat dry. Submerge brisket in cooled brining liquid and weigh down with a plate or platter. Cover and refrigerate for 4-6 days.
