Bhutanese Cucumber & Carrot Relish

This spicy relish was featured in our Bhutanese cooking class taught by Bhagawati and Devi Gurung. Its combination of heat and crunch make it a great summer condiment that's quick to throw together. Ingredients
1 cucumber (chopped)
1 carrot (chopped)
1 tomato (chopped)
3 tablespoons sesame seeds
2 pepper, red hot (finely chopped)
1 teaspoon salt
3 tablespoons yogurt
Instructions
In a bowl, combine cucumber, carrot, plum tomato, and toasted sesame seeds. Grind together hot peppers and salt in a mortar and pestle, then add to vegetable mixture. Add the yogurt and mix together.
