Farmer's Cheese from Butterworks Farm

One of our favorite local producers, Butterworks Farm, is now making Farmer's Cheese. It's organic and is quite versatile. Here are just a few ways you can use it:

• Spread on crackers, toast, or bagels in place of cream cheese
• Use as filling for ravioli, pasta shells, or lasagna
• Use in cheesecake, kugel or other baked desserts
• Blend with yogurt or sour cream for dip
• Use in place of cojita (Mexican cheese) to garnish refried beans or quesadillas
