The Mosaic of Flavor cooking series is a collaboration between City Market and USCRI Vermont (US Committee for Refugees and Immigrants Vermont, formerly the Vermont Refugee Resettlement Program). We will start off our class series this fall with an in-person class featuring two Congolese dishes, taught by Machozi Massa. Machozi will teach us to make seasoned tilapia and vegetable rice, two of her favorite dishes. Machozi moved to Burlington in June 2023 with her husband and three children. Machozi is from Uvira in the South Kivu Province of the Democratic Republic of Congo and before coming to Burlington, lived in South Africa since 2010. In addition to English and Kibembe, Machozi also speaks French and Swahili. Machozi is excited to share her love of cooking and Congolese cuisine with us.
Proceeds from the tickets sales for this class will go to New American farmers affected by the recent flooding. Class will be held in-person in the South End Community Room.
