The Mosaic of Flavor cooking series is a collaboration between City Market and USCRI Vermont (US Committee for Refugees and Immigrants Vermont, formerly the Vermont Refugee Resettlement Program). For our March class we will welcome Ledy Mouyaka, an accomplished Congolese cook who will share three of her favorite festive recipes with us: Samosas, savory pastries filled with delicious spiced beef and vegetables, Fufu, a soft and filling dish often made of cassava powder or another starch, and Saka-Saka, a traditional Congolese vegetable dish made of sautéed cassava leaves flavored with fish.
Ledy is originally from Congo Brazzaville and came to Vermont in 2007 after living in Gabon for ten years. She was accompanied by her husband, four (of their now six) children and her mother in law. Ledy is an avid cook and, besides preparing delicious meals for her family, loves big celebrations and all of the communal cooking that's involved. This should be a fun and energetic class--hope you can join us!
