This monthly series is a collaboration with US Committee for Refugees and Immigrants Vermont (USCRI). We invite you to join us for a special evening as we learn about traditional dishes from Tajikistan, a mountainous country in Central Asia. Tajiki cuisine has been influenced by the country's rich history, mountainous geography and the neighboring regions of Afghanistan, Persia, China and Russia. Together, we will learn to make Tajiki Rice Pilaf, a favorite national dish made with carrots, onions, herbs and lamb or beef and Shakarob, a fresh cucumber and tomato salad that accompanies the Pilaf. We will also learn to make Manti, Tajiki dumplings stuffed with beef and spices, including learning how to roll out the dough and form the traditional flower-shaped dumplings. Our instructor, Munira Qosimova, is from Tajikistan and came to Vermont in 2008. She has a 12-year-old son, Doro, who loves to cook and is excited to watch his mother teach his favorite dish, Rice Pilaf.
