This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In October, we will make two traditional dishes from Burundi, a landlocked country in the Great Lakes region of East Africa. Isupu gitoke kibisi is a filling green banana soup and I biraya ninyama is a hearty potato and goat meat main dish that is popular in rural areas throughout Burundi. Our instructor, Fatuma Hussein, is from Burundi and came to Vermont in 2007. Fatuma is an accomplished cook and enjoys sharing her knowledge and love of Burundian food. Fatuma works as a cook at the downtown City Market in Burlington.
