This monthly series is a collaboration with the Vermont Refugee Resettlement Program.
For our May class, Phathlongxay Keomanyvanh will be sharing her recipe for Larb Gai (a Thai spicy chicken salad fragrant with lime and mint common to both Laos and Thailand) with Khao Niew (Laotion sticky rice). We will complete our delicious meal with a traditional dessert of coconut sticky rice with mango. Phet was born in Laos in 1975, during the height of the Vietnam War. She fled with her parents in 1976 to Thailand where they lived in the Thai refugee camp until their family was sponsored by three families in VT. Phet now lives in Burlington with her husband and their two daughters. She especially enjoys cooking with her children, passing down traditions and dishes to her daughters to help them remain connected with their Lao heritage.
