A Mosaic of Flavor: Bhutanese Vegetable Momos with Spicy Pickled Tomatoes

This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In March, we will be preparing two traditional dishes popular in Bhutan. We will learn to make vegetarian momos, a traditional Bhutanese dumpling filled with cabbage, onions, ginger and a masala spice mix. We will also make “pickled” tomatoes, a fresh tomato sauce that is often enjoyed alongside momos. Hema Pantha and Santa Gurung came separately to Vermont from Bhutan in 2013 and forged a wonderful friendship upon their arrival. Both women live with their families in Winooski, each have three children, and have been cooking since they were eleven! Together they will give us a window into Bhutanese culture and cuisine.
