This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In January, we will be preparing two traditional dishes from Uganda. We will learn to make Gweno, a chicken dish with vegetables and sweet potatoes and a split cowpea and peanut butter stew. We will also learn how to process and cut up a whole chicken.
Shilla Adyero is a human rights advocate from Northern Uganda, where she founded Lutino Adunu, a community-based organization that improves literacy and education among children in Northern Uganda. Shilla is pursuing her Masters in Sustainable Development at SIT Graduate Institute in Brattleboro, VT and interns with VRRP. Shilla writes, "I am a traditional Acholi woman and also a Luo by origin. Coming from an agricultural community, the Acholis, particularly those that live in villages, eat fresh foods that go straight from their gardens into a cooking pot, and the same applies to the rest of the country. The Acholis are known for their cooking, dancing, hospitality and kindness. Traditionally, it was taboo for women to eat chicken. But as time went by, empowered women like me were born and such injustices ended. To continue promoting equality at our dinner tables, please join me and share a traditional Acholi meal."
