Mosaic of Flavors: Bosnian-Herzegovinian Zeljanica and Palacinke

This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In September, we will be preparing Zeljanica, a favorite savory dish in the Balkans made of spinach and feta cheese wrapped in thin layers of crispy filo pastry, similar to Greek Spanakopita. We will also learn to make Palacinke, or "Euro-pan cake", a traditional crepe and nutella dessert. A professional caterer, Davorka will share all her secrets for making these two delicate and tasty dishes. Davorka Gosto came to Vermont from Bosnia-Herzegovina over 20 years ago. She feels blessed to be one of two daughters raised by a mother who trained and worked as a professional cook in Mostar. Davorka has written a cookbook, From Mama's Kitchen: Cuisine of Herzegovina.
