Join Hugo Lara in a class on making Peruvian small plates that are perfect for summer parties and potlucks. He will show us how to make Causa and Papa a la Huancaina. Both of these dishes highlight the simple but flavorful potato, a Peruvian staple with over 4,000 varieties found in the country. Causa is a whipped potato cake infused with lime and yellow pepper flecks and beautifully layered with chicken or tuna. Papa a la Huancaina is a classic small plate that envelopes potatoes in a rich, creamy yellow pepper sauce made with queso fresco. Hugo Lara has a popular Peruvian food stand at the Burlington Farmer’s Market called A Little Peruvian.
